How to make a quick and easy smoked salmon spread that tastes delicious!!!

If you are looking for a great smoked salmon spread recipe that is also quick and easy, look no further! This is another recipe we always make around Christmas and it rocks!!! Seriously, my wife and I love it. We like to put it on some good bread and it’s even better if you melt some asiago cheese on top in the toaster oven. Really good stuff. This is definitely an easy one, the hardest part is mixing it up. That’s my job. Laughing  Here is how we make it.

The ingredients are pretty simple. I use a pack of smoked salmon, cream cheese, dill, half a sweet onion and lemon juice if I have it. I think the original recipe I saw for this was on a pack of salmon and it called for scallions. I figured I’d try the sweet onion once a long time ago and I’ve been using it ever since. I think it works just as well with this, if not better.

The first thing you want to do is unwrap the cream cheese, put it in the bowl and mix it up. If you are using lemon juice, you want to add it now. It helps to break the cream cheese down and makes it mix up a little smoother. Honestly I’m not sure if it serves any other purpose? That’s why I leave it out of I don’t have it. Not a showstopper by any means.

Next, I chop the sweet onion up into very small pieces. You don’t want it in big chunks or it doesn’t mix up right. Doesn’t taste as good either. Make them pretty small but it is nothing to spend a whole lot of time with.

 

Now I open the salmon and start tearing it up into small pieces with my hands. I tear it into fairly small pieces, you want it small enough that you can mix it up well. Again, you don’t want it in big chunks. I usually use the whole package but it all depends how much you have. Really it is all going to depend on how much you like salmon and how much you want in there.

Like I said before, mixing the cream cheese and everything up is definitely the hardest part of all this. I usually use a big metal slotted spoon I have and push down on the cream cheese, mix it all around, push down again, etc. It can definitely be tough and you have to put a little muscle into it. It helps to leave the cream cheese out for a bit before you do this so it softens up a little. I add some salmon, mix it up, add some more, mix it up, until I’ve used it all. You probably don’t want to add it all at once, it seems a little harder to mix that way to me.

Once you are to this point you are almost done. All I do after this is add the dill seasoning. If you have chopped fresh dill all the better, but I bought a container of dill some years ago and have been using it ever since. Funny, I think this is all I have ever used it for. So it will probably last me another ten years easy. Laughing  I usually cover the top with a liberal amount, mix it up, then I cover the top again.

That’s it! You’re done. You can eat it now if you want but I usually wrap it in saran wrap then put it in the refrigerator. It firms up nicely this way and is better overall I think.

It all depends what you like but here is one of my favorite ways to serve this. Get yourself some good pumpernickel bread. I got some pumpernickel english muffin type thing once and they were ideal, but I don’t know if I ever found them again. I usually just get a good loaf at a local market we like.

Next, slather on some of the salmon spread. You might want to taste it first if you haven’t already but I usually use a good bit. Next, slice up some asiago cheese and lay it on top. When I have that together I put it in our toaster oven and broil it until I see the cheese melting. My mouth is watering just thinking about it right now, yes it is that good.

You know how sometimes you have something in the refrigerator and you eat a little then it sits there or you think you are saving it then all of a sudden you realize it’s been a long time and you aren’t sure if it is still good anymore? I think that happened one year with this and I almost cried when we threw it away.  Cry So I remembered that the next Christmas and after it was in the refrigerator a few days I started eating it with a vengeance. My wife saw it was almost gone and she really got steamed!  Yell I meant well in some kind of way that I didn’t want it to go to waste again, but my wife didn’t see it that way. So again, that shows you how fantastic this smoked salmon cream cheese spread is!
