How to cook some delicious beef shish kabobs on the grill!!!

I always end up thinking Shish kabob (shish kebab) on the grill in Summer is a special kind of meal. Something about the meat and vegetables on the skewers always seems pretty cool to me. There is definitely a little work involved, but it really isn’t that hard. If you do it right, you end up with a really delicious meal and some fun outdoor cooking. Your family will thank you!

First you are going to need to decide what kind of meat you are using. I think I used some kind of sirloin beef tips for this. Some people like to use chicken, lamb, pork, really you can use almost any kind of meat. I like to use beef because I don’t have to worry about undercooking it as much. I’ve always found italian dressing works well as a shish kabob marinade. I just put the beef tips in a ziploc bag and pour the dressing in, then I let them marinate for a few hours in the refrigerator. That tendered the beef up and also gave it a great flavor.

Next, you are going to need to choose your vegetables. I believe we used zucchini, peppers, onions and mushrooms here. Mushrooms are a definite must, take my word for it. 🙂 Cutting up the vegetables is usually the hardest part. My wife was nice enough to do that here, then we put those into a ziploc bag as well. Usually it is easier to get everything ready for something like this beforehand, then throw everything on the grill when you are ready. You don’t want to slice the vegetables up too far in advance or they can get a little old and funny. A few hours is usually fine though, works for me.

Now come the kabob skewers. If you don’t have any, you’ll have to buy some.

Mine are like these and work great for me. All you do now is put on some vegetables, then some meat, then some vegetables, then some meat and keep doing that until you reach the end. It takes a while to do this also but you need to get everything on there well or it will fall off during grilling. Take your time and do it right, you’ll be glad you did later.

After I have everything on the kabob skewers I like to shake on a little salt and pepper. You can use any kind of seasoning you like really. I like to keep it simple and enjoy the natural flavors of the vegetables and meat. The italian dressing marinade lends plenty of flavor in my opinion.

That’s pretty much it and the hardest part of this recipe for sure. Now all you need to do is grill them. Get a hot grill going and lay your skewers straight across your grill. Make sure you have them sitting correctly so you can put your lid on. I believe I cooked these 10 minutes on one side, flipped them over then ten minutes on the other side. The meat will cook faster than the vegetables if you are using beef. You want to make sure you cook them long enough for the vegetables to be done.

Anyway, ten minutes on a side seemed to work out great for me.

These were delicious! The flavor was amazing and like I said before, one of my favorites are the mushrooms for sure. They are just wonderful.
