I love ham barbecue. It’s one of those things I swear I could eat once a week for the next ten years and not get tired of it. It is really easy to make and just tastes plain delicious.
Here is how we make it.
First, you are going to need a frying pan. Fry some onion up in a little butter. Really the amount of onion is up to you depending on how much onion you like and how much ham you are using.
After you have the onion going well, add very thinly sliced ham. Some people call this chipped ham, some chip chopped, some thinly sliced, whatever. The point is you want the ham to be sliced as thin as you can get it. Let’s say we are using a pound and a half of ham here.
Next, you want to add your favorite brand of ketchup. You can just add what you think you need. If you are looking for a measurement, I would say 1/2 to 3/4 of a cup or so.
Next, add a little shot of your favorite barbecue sauce.
Last, my wife likes to add a little relish. Honestly, I like to leave it out. Really it is up to you and depends on whether or not you like relish I suppose.
You want to move the ham around the whole time you are doing this. I wouldn’t use too high of heat, but you need it hot enough to cook everything. Make sure not to burn the ham, you just want it to cook enough that it is hot all the way through. Really once you have everything going, I’d turn the heat down to low, put the lid on and just let it simmer for 5-10 minutes or so at the end being careful nothing burns.
That’s really all there is to it. Get yourself some of your favorite buns and that’s all you need for a great meal.

This is PA food from when I was a kid growing up in PA. But not always with chipped ham but also with regular left over baked ham, dicing the leftovers up and making the barbeque that way.
