This crockpot beef is a really good one, and super easy. A winning combination in my book. I shred it up and it’s actually pretty similar to pulled pork in the crockpot, which I will be posting soon as well.
I picked up a whole sirloin tip roast in cryovac, almost 8 lbs. I love these roasts.
They are very versatile, you can use them for a lot of different things.
Anyway, I just unwrapped the sirloin roast then rinsed it off under the sink. I like to do that to get off the solution it’s packed in.
Then I put it in the crockpot and covered it with barbecue sauce, I used Open Pit. I buy the big bottles from my favorite warehouse club. Honestly I think it turned out perfect with the Open Pit. It has a unique flavor that went well with the sirloin roast in my opinion.
I only used enough to cover the roast, you don’t want to use too much as everything you pour in is going to be thrown away at this point. So pour some on, put on your crock pot lid and set it to low. I let it go all night on low, I just like how I wake up in the morning and it is done. 🙂 If you are looking for a time I’d say you want it to go 7-8 hours on low. It all depends when you go to bed and when you are planning to get up if you use the all night method.
When you wake up in the morning, or after 7-8 hours, you want to shut off the crock and take the sirloin roast out. I put mine in a big bowl I have. You can tent some foil over it if you like, not necessary though. Now, you want to pour out all of the junk that is left in the crock. Juice, fat, old barbecue sauce, etc. It is going to be a greasy mess so just pour it out into some kind of a container and throw it in the garbage. DO NOT pour it down your drain unless you are looking for plumbing problems.
Next, I wash out my crock to get all of the grease and everything out of it. We are going to end up putting the meat back into the crock so you don’t want any grease or anything in there.
Now all you need to do is shred the meat up. I use a couple metal forks to get it going. I’ve heard good things about these kinds of devices but never used them myself. Once you have it loosened up a little, you can just pull it apart with your hands more or less. You want to divide up the good meat from the fat, gristle, etc. Anything that doesn’t look like good meat, throw away. This is probably the most difficult part of this recipe, but it isn’t that bad. It can be a little time consuming, but if you do a good job you will be rewarded with the final product. 🙂
Once you have all the good meat shredded up, just throw it back into your clean crock. Now all you need to do is add some barbecue sauce and mix everything up well. I turn it back to low and let it go for another hour or two. This time at the end warms everything up nice and mixes the flavors together well.
Now you are ready for the bbq beef sandwiches. 🙂
